BUTTERMILK COFFEE CAKE 
1/2 c. shortening
1 1/2 c. sugar
2 1/2 c. flour
1 tsp. baking powder
1 c. buttermilk
1 egg
1/2 tsp. baking soda
1/2 tsp. salt

Mix first 4 ingredients; reserve 1 cup of mixture for streusel. Add a little more sugar and set aside. Then add buttermilk, egg, baking soda and salt. Grease and flour a 9 x 13 inch pan. Pour batter into pan. Top with reserved topping. Bake at 350 degrees for 30 minutes. Top will be crumbly but it is very moist.
