DANISH BUTTERMILK COFFEE CAKE 
2 c. sugar
1/2 c. shortening
2 eggs, well beaten
1 tsp. lemon flavoring
2 c. buttermilk
4 c. sifted flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 c. raisins (I like white raisins)
1/4 c. candied fruits

Cream sugar and shortening and add eggs and flavoring. Sift all dry ingredients and add alternately with buttermilk. Add raisins and fruit. Bake at 350 degrees 1 hour or until well browned. Makes 2 loaves.

Top can be brushed with milk and sprinkled with sugar before baking, if desired.
