ROSTI POTATOES 
1 1/2 lbs. potatoes
8 oz. Swiss cheese
1 tsp. salt
pinch of white pepper

Boil potatoes until tender and drain immediately. Cool and peel. Shred into bowl. Shred Swiss cheese into same bowl. Add salt and pepper and mix well. Fry in a hot buttered cast iron skillet or non-stick pan. Brown on one side and turn. Serve immediately.
