ITALIAN POT ROAST 
3 lb. chuck roast
2 tbsp. vegetable oil
2 cloves garlic (crushed)
1 1/2 tsp. oregano leaves
1 tsp. whole thyme
1/8 tsp. cinnamon
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. sugar
2 (6 oz.) cans tomato paste
3 c. water
1 lb. noodles
Parmesan cheese
Chopped chives

Brown meat in foil. Remove meat and lower heat. Add garlic and next 8 seasonings. Simmer 5 minutes (be careful not to burn). Return meat to skillet.

Mix tomato paste with water and pour over meat. Bring to a full boil. Lower heat and cover loosely. Simmer 2-3 hours, turn meat occasionally. When meat is tender, serve with noodles, onions and carrots.
