ZUCCHINI LASAGNA 
3/4 lb. lean ground beef
1/2 c. finely chopped onion
2 cloves garlic, crushed
1/2 c. diced green pepper
1/4 c. grated carrots
16 oz. plain tomato sauce
1/2 tsp. oregano
1/2 tsp. basil
salt & pepper to taste
4 or 5 med. zucchini, unpeeled
8 oz. low fat cottage cheese
1 egg
6 oz. Mozzarella cheese, grated

Brown meat, drain fat. Add onion, garlic, green pepper, carrots, tomato sauce, seasonings. Simmer, uncovered 10 minutes.

Remove ends of zucchini, slice lengthwise abut 1/4" thick. Arrange half of the slices over bottom of 8"x12" baking dish.

Beat together cottage cheese and egg. Spread over zucchini. top with layer of half the sauce and half the Mozzarella. Layer remaining zucchini, Mozzarella and sauce. Bake, uncovered 40 minutes at 350 degrees. Let stand 10 minutes before serving. Serves 4, 350 calories each serving.
