RED VELVET CAKE 
2 1/2 c. plain flour
1 c. buttermilk
2 c. sugar
1 1/2 c. cooking oil
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
1 tsp. vinegar
2 tsp. cocoa
2 eggs
2 bottles red food coloring

ICING:

1 stick butter
1 tsp. vanilla
1 c. chopped pecans
1 (8 oz.) cream cheese
1 box powdered sugar

Cream sugar and oil; add eggs and beat well. Sift flour, salt and soda together. Mix cocoa and red food coloring together; add vinegar and mix well. Add all this to sugar mixture. Beat hard and add flour alternately with buttermilk. Add vanilla and beat well. Bake at 350 degrees for 35 minutes (in layers).

ICING: Cream butter, cream cheese and sugar until smooth. Then add vanilla and nuts. Make recipe and 1/2 for plenty of icing.
