GROUND BEEF STROGANOFF 
1/2 c. onion, chopped
1/4 c. butter
1 lb. ground lean beef, cooked and drained
1 clove garlic, crushed
2 tbsp. butter
2 tsp. salt
1/4 tsp. pepper
1/4 tsp. paprika
1 lb. fresh mushrooms, sliced and sauteed
1 can cream of chicken soup
1 c. sour cream

Saute onions in butter until golden. Stir in ground beef, then add the soup. Simmer uncovered 10 minutes. Fold in sour cream. Serve over rice or noodles.
