SAUSAGE AND SPINACH PIE 
1/2 lb. sweet Italian sausage
3 med. eggs
1 (10 oz.) pkg. chopped frozen spinach
2 c. shredded Mozzarella cheese
1 double pie crust shell
1/2 c. Ricotta cheese or cottage cheese
1/4 tsp. salt
Dash of pepper
3 or 4 dashes garlic powder
1 1/2 tsp. water

Thaw spinach and squeeze out all water. Brown crumbled sausage and drain off fat. Reserve one egg yolk. Mix all ingredients (except the water and egg yolk), then add browned sausage and mix well. Put into pie shell and cover with a top crust; seal edges well.

Pierce top crust with fork. Mix reserved egg yolk and water together. Brush top of pie crust with this mixture. Bake at 375 degrees for about 1 hour 5 minutes. Let stand about 20 minutes before you serve it. (It is important that you let this set the 20 minutes before serving.)
