APPLESAUCE COFFEE CAKE 
1 3/4 c. flour
1/2 c. sugar
1/2 c. butter
2 beaten eggs
1 tsp. vanilla
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 c. chunk style applesauce
1/4 c. chopped nuts
1/2 tsp. ground cinnamon

Stir together 3/4 cup of the flour and the sugar; cut in butter until crumbly. Set aside 1/2 cup of the crumb mixture for topping. To remaining crumb mixture, add eggs and vanilla; beat by hand until smooth. Stir together remaining 1 cup flour, the baking powder, soda, and 1/2 teaspoon salt. Add dry ingredients and applesauce alternately to beaten mixture, stirring after each addition. Turn into a greased 8 x 8 x 2 inch baking pan. Stir nuts and cinnamon into reserved crumb mixture; sprinkle on top. Bake at 375 degrees for 30 minutes or until done. Serve warm.
