CARROT PUDDING 
2 c. mashed, cooked carrots
1 stick butter
1 c. sugar
1 c. raisins
2 eggs
2/3 c. milk
1 c. bread crumbs
1 c. macaroons (coconut cookies), mashed
1/2 tsp. salt
1 1/2 tsp. baking powder

Mix ingredients, adding raisins and cookies last. Bake in 1 1/2-quart dish at 350 degrees for 30 minutes.
