PFEFFERNUESSE 
3 1/2 c. flour
2 tsp. cinnamon
1 tsp. baking powder
1/2 tsp. each nutmeg, allspice, cloves, salt, pepper, mace (stir together)
4 eggs
2 c. sugar
1 1/2 tsp. ground lemon rind
1/2 c. ground almonds
1/2 c. citron, finely chopped
1 c. powdered sugar to roll cookies in

A German Christmas cookie. Stir together flour, baking powder and spices. Beat eggs at medium speed until fluffy. Gradually beat in sugar; continue beating 15 minutes longer until thick and fluffy. Add flour mixture gradually in thirds. Then add rind, almonds and citron. Form into small balls and place 1 inch apart on greased cookie sheets. Let stand uncovered at room temperature overnight. Bake at 300 degrees for 20 minutes. Immediately after taking from the oven roll in powdered sugar. Store in airtight container for up to 3 weeks or freeze.
