PEAR HONEY 
4 lg. ripe pears
1 (8 oz.) can unsweetened crushed pineapple
Grated rind and juice of 1 lemon or lime
2 c. sugar

Wash pears, peel, quarter and core. Force through food chopper. Combine with pineapple, rind, juice and sugar in Dutch oven. Bring to boil and simmer uncovered for about 30 minutes. Stir frequently until thick and translucent. Pour at once into hot sterile jars and seal.
