RICHARD'S ROYAL POTATO SALAD | |
2 1/2 lb. baby red potatoes 6 hard boiled eggs 1 (1 lb.) pkg. thick cut bacon 2 red onions Ranch dressing (HIDDEN VALLEY®) 2 tbsp. seasoning (I use Alpine Touch - Montana's Special Spice!) 1 tbsp. Kosher salt 1 tbsp. coarse ground pepper Quarter and boil the red potatoes but don't over cook!!! At the same time have your eggs boiling! Meanwhile cut the bacon and the onions! Start the bacon in a sauté pan and get your mixing bowl ready! When the potatoes are ready, get them in a colander under some cold water! Quarter the eggs as well! Big chunks are necessary for this recipe! I prefer homemade buttermilk Ranch but whatever is clever! Get the potatoes in the bowl with the eggs, bacon, diced red onions and add the Ranch, pepper, salt and the seasoning! Mix well! For best results, let chill overnight in the refrigerator!
