TABBOULI SALAD 
1 c. bulgar wheat, uncooked
2 c. boiling water
1/2 c. chopped parsley
1/4 c. chopped mint or 2 tbsp. dried
4 green onions, chopped
2 med. tomatoes, chopped
16 oz. can chick peas
4 oz. feta cheese, broken into large chunks
Sm. can black olives
Cucumber, diced (optional)

Pour boiling water over bulgar in large bowl. Let stand 1 hour. Drain well in colander and return to bowl. Add remaining ingredients and dressing and blend well.

DRESSING:

1/2 c. olive oil
1/3 c. lemon juice
3/4 tsp. salt
1/2 tsp. pepper

Chill at least 2 hours. Serve on lettuce if desired. Makes 4 to 6 servings.
