SCALLOPED POTATOES, ETC. 
This tasty dish uses less sugar, salt, fat!

SAUCE:

2 tbsp. butter
2 tbsp. flour
3/4 tsp. salt
1/4 tsp. black pepper
2 c. milk

CASSEROLE:

4 c. peeled potatoes, sliced 1/8 inch thick
1 c. carrots, sliced 1/8 inch thick
1/4 c. chopped onions
1/4 c. chopped green pepper
1 c. cubed ham
1 (4 oz.) pkg. sharp Cheddar cheese, shredded

For sauce, melt butter in small saucepan; stir in flour, salt and pepper. Cook, stirring constantly for 1 minute. Gradually whisk in the milk; cook until thickened. Set aside. In a buttered 2 quart casserole, layer 1/2 of all vegetables and ham; cover with 1/2 of white sauce.

Repeat layers. Sprinkle cheese over all. Bake, covered, at 350 degrees for 1 hour. Remove cover. Bake 10 minutes longer. Yield 4 to 6 servings.
