CITRUS LIME MUFFINS 
2 c. sifted flour
1 tbsp. baking powder
1/4 c. milk
1/4 c. vegetable oil
1/4 c. lime juice
1 c. sugar
1/2 tsp. salt
2 eggs. lightly beaten
1 tsp. grated lime rind

Sift together flour, baking powder and salt into large bowl. Mix milk, eggs, oil, lime rind and juice in 2 cups measure. Add all at once to flour mix and stir lightly with fork until moist mix will be lumpy. Spoon into paper lined muffin cups and fill 3/4 full. Bake at 400 degrees for 20 minutes. Can also substitute orange juice and rind for different flavor.
