SIMPLE PICKLED BEETS 
1 can sliced beets (reserve juice)
1/2 c. cider vinegar
1/4 c. sugar
1/2 c. beet juice
1/2 med. onion, sliced thin (optional)

Put all ingredients in pot except beet juice. Boil or simmer 5 minutes. Drain vinegar-sugar mixture. Place beets in serving bowl. Add 1/2 cup of beet juice and refrigerate.
