ENCHILADA BAKE 
Great with cornbread!

1 lb. ground beef
2 lb. Mexican cheese mix (shredded)
1 can chopped green chilies
1 can refried beans
1 green pepper
1 onion
1 pkg. taco seasoning
1 potato, diced into small pieces
1 can enchilada sauce
green onions, chopped (1/2 cup) optional
flour/corn tortilla shells

Brown beef with minced onion and potato until potatoes are soft. Mince green pepper. Add green pepper to beef mixture. Add drained green chilies. Add the half of the enchilada sauce and taco seasoning.

In 9x13-inch pan, greased, place enough tortillas to cover the bottom of the pan (usually 2-3). Pour in enough of the meat mixture to cover the tortillas. Add 1 pound of cheese. Add another layer of tortillas, meat, and pour remaining enchilada sauce on top. Add rest of cheese. Sprinkle with chopped green onions, if desired.

Bake dish at 350°F for 35 minutes.
