LOW - CAL BAKED MACARONI &
CHEESE
 
1 c. uncooked elbow macaroni
2 beaten eggs
1 c. lowfat or skim milk
1 c. lowfat cottage cheese
1/4 c. (1 oz.) shredded extra-sharp Cheddar cheese
1/2 tsp. salt
1/4 tsp. freshly ground pepper

Cook macaroni according to package directions, omitting salt. Drain. Combine macaroni and next 6 ingredients.

Spoon mixture into a 1 quart baking dish coated with cooking spray. Sprinkle with bread crumbs. Bake at 350 degrees for 45 minutes. (158 calories per serving.) Serves 6.
