BAKED MACARONI AND CHEESE AU VIN 
2 (12 oz.) packages macaroni, cooked
2 1/2 c. grated American cheese per layer
1/2 c. grated Romano cheese
Swiss cheese strips
6 eggs
2 1/2 c. Sauterne wine
1 1/2 tbsp. Worcestershire sauce
1 1/2 tsp. Louisiana Green Hot sauce (Red, if Green is not available)
1 1/2 tsp. salt
Water

Grease casserole with olive oil, including sides and bottom. This casserole is made in layers. Start with macaroni, add cheeses, another layer of macaroni, and top with cheeses until casserole is full. Combine eggs, wine, Worcestershire sauce, hot sauce, and salt. Pour egg mixture over layered casserole and add water, if necessary, to barely cover.

Bake in 350°F oven until top layer of cheese is golden brown.

Serves 8.

(If any of this is left over, chill, cut like fudge, and serve as hors d'oeuvres the next day or so.)
