AUNT JEANNIE'S POTATO SALAD | |
5 lb. red potatoes (unpeeled) 1 large onion, diced 10 eggs (hard-boiled and diced) DRESSING: 3 cups Miracle Whip 3 tbsp. mustard (I use Ploughman's) 1/3 cup apple cider vinegar 1/8 to 1/4 cup granulated sugar Boil potatoes with skins on; drain, peel and mash while warm; add onion and diced eggs. Mix dressing ingredients in separate bowl until well blended and then gradually add to the potato mixture until well blended, but not over-saturated. Cover with Saran or plastic wrap and let set overnight in refrigerator. Serve. Note: The warm potatoes soak up the dressing (add more or less dressing to taste). ENJOY!!!
