CHERRY COFFEE CAKE 
3/4 c. granulated sugar
1/4 c. butter
1/4 c. Crisco or lard
2 eggs
1/2 tsp. vanilla and almond extract
1 1/2 c. self-rising flour
21 oz. can cherry pie filling

In a mixing bowl combine sugar, butter, shortening, eggs, flavoring; mix well. Stir in flour; mix well. Spoon 3/4 of batter into 9-inch pan. Evenly spread pie filling over batter. Using a tablespoon, drop the remaining batter over top of pie filling leaving space between each spoon full. Bake at 350 degrees for 45 minutes or until done.
