ALL-SEASON COFFEE CAKE | |
3/4 c. sugar 1/4 c. soft shortening 1 egg 1/2 c. milk 2 tsp. baking powder Pinch of salt 2 c. flour 2 c. fresh fruit, chopped (blueberries, apples, peaches, cherries, bananas - alone or mixture) Mix sugar, shortening, and egg. stir in milk and add dry ingredients alternately. Blend in fruit. Pour into greased 13 x 9 inch pan. TOPPING: 1 c. sugar 1 tsp. cinnamon 2/3 c. flour 1/2 c. soft butter Combine topping ingredients and sprinkle on batter. Bake at 350 degrees for about 50 minutes. |
