LECHE FLAN 
2 c. evaporated milk
8 egg yolks
1 tsp. vanilla
1 c. sugar

Beat egg yolks. Add milk, sugar, and flavoring. Pour into 1 quart mold. Place the mold in a large pan half filled with water. Bake for 1 hour at 350 degrees. Cool before removing from the mold. If desired, line mold with caramel syrup before pouring in the mixture for baking.

CARAMELIZED SUGAR:

1 c. sugar
1/2 c. hot water

Heat sugar on low until brown. Add water to dissolve caramelized sugar to syrup form.
