SPICY SESAME NOODLES | |
1 lb. Chinese noodles or spaghetti 4 tbsp. peanut (or vegetable) oil 6 tbsp. rice (or white) vinegar 6 tbsp. soy sauce 2 tbsp. sesame oil 3 tsp. minced fresh ginger 2 tsp. chopped fresh cilantro (optional) 1 carrot, cut into 1 inch match sticks Sesame seeds If using fresh Chinese noodles, place noodles in boiling salted water and boil 5 to 7 minutes until tender. Drain and rinse under cool water. Set aside to drain. Mix oil, vinegar, soy sauce, sesame oil, ginger and cilantro together in a bowl. Add the noodles and carrot and toss well. This can be served cold or room temperature. Garnish each serving with sesame seeds. Scallions or pea pods also make a nice addition. |
