SPINACH-CHEESE QUICHE 
1 med. onion, chopped
2 pkg. frozen spinach, thawed and drained
1 1/2 lb. Italian Ricotta cheese
3 eggs
3 tbsp. Parmesan cheese
1 lb. sliced Muenster cheese
Salt and pepper to taste
Cooking oil

Saute the chopped onion in hot oil. Cook spinach and drain thoroughly. In bowl, add onion, spinach, Ricotta cheese, eggs, salt and pepper; mix. Grease baking quiche pan.

Place 1/2 of Muenster cheese on the bottom of pan; add the onion-spinach-cheese mixture. Top with the remaining Muenster slices, sprinkle with Parmesan cheese. Bake for 25 to 30 minutes at 350 degrees.
