ZUCCHINI CASSEROLE 
3 c. sliced zucchini, cooked until almost tender
1 1/2 c. soda cracker crumbs
3 eggs, beaten
1/2 c. butter, melted
1/2 tsp. salt
1 (2 oz.) jar pimentos, diced
1 c. milk
2 c. cheddar cheese

Mix all ingredients together. Pour into greased 2-quart casserole. Bake uncovered at 300 degrees for 30-40 minutes or until golden brown.
