QUICK SCAMPI 
1 lb. unpeeled med. fresh shrimp
1/4 c. butter, melted
1 tbsp. sliced green onions
1 to 2 cloves garlic, minced
1 tbsp. lemon juice
Dash of salt
1/2 tsp. grated lemon rind
2 tbsp. minced parsley
1/4 tsp. hot sauce
Lemon slice (optional)
Fresh parsley sprigs (optional)

Peel and devein shrimp, set aside. Combine butter and next 4 ingredients in a large skillet; heat until bubbly. Reduce heat to medium, add shrimp. Cook, stirring frequently, about 5 minutes or until shrimp turn pink. Add lemon rind, parsley and hot sauce; toss lightly. If desired, garnish with a lemon slice and parsley; serve immediately. 2 servings.

For 4 make 2 1/2 x's the sauce otherwise, double the recipe. Go slow on the garlic.
