TIPSY PUDDING 
Approx. 32 sm. ladyfingers
1 tbsp. gelatin
2 tbsp. cold water
1/4 c. boiling water
3 eggs, separated
1/3 c. sherry
1 c. heavy cream, whipped
1 tsp. vanilla
1/2 c. sugar

Beat egg yolks; add sugar. Beat. Add vanilla, sherry and gelatin, which has been softened in cold water and mixed with hot water. Beat egg whites stiff and fold into egg mixture. Then fold in whipped cream. Line a spring mold with ladyfingers (bottom and side). Pour mixture into mold and refrigerate until set.
