JOY CHOW PIE | |
1 c. chow mein noodles 3 egg whites 3 tsp. cream of tartar 1 c. sugar 2 tsp. vanilla 1/2 tsp. lemon extract 1 c. chopped pecans 2 sm. boxes frozen strawberries 1 c. whipping cream 2 tsp. powdered sugar Crush noodles. Beat egg whites and cream of tartar until stiff. Gradually add sugar and continue beating until very stiff. Fold in 1 teaspoon vanilla, lemon extract, noodles and pecans. Spread meringue into well buttered 9 inch pie plate. Mound to sides, leaving bottom slightly hollow for filling. Bake at 325 degrees for 35 minutes. Cool completely. Cut into 8 servings; place on serving plates. Top with partially thawed strawberries. Whip cream, add powdered sugar and remaining vanilla. Top strawberries with whipped cream. |
