MASHED POTATO CASSEROLE 
8-10 med. potatoes, cooked, peeled
8 oz. cream cheese, softened
8 oz. sour cream
4 tbsp. butter
Sm. onion, chopped
1 can French fried onions

Beat cream cheese and sour cream together. Add potatoes, beat until smooth. Add butter, chopped onion, salt and pepper to taste. Pour into well greased casserole dish. Bake at 350 degrees for 20 to 25 minutes. Sprinkle French fried onions on top. Brown 5 to 10 minutes more.
