BEEF STROGANOFF 
1 lb. beef tenderloin
2 med. onions
1 tbsp. flour
Clarified butter
1/8 c. catsup
1/8 c. Worcestershire sauce
3/4 c. sour cream
Salt and black pepper

Slice beef into fine strips (5 x 1/4 inches). Slice onions. Combine catsup and Worcestershire sauce.

Melt some butter in a pan on high heat. Add onions and fry until golden brown. Add meat; season with salt and pepper; allow to fry gently for 5 minutes.

Stir in flour and allow flour to cook out for 1 minute. Add the catsup combined with Worcestershire sauce and then stir in sour cream. Allow stroganoff to simmer for 4 minutes. Serve with noodles or wild rice.

2 large servings. May be doubled.
