STUFFED MASHED POTATOES 
6 to 8 med. potatoes
2 eggs
1/2 c. Parmesan cheese
3/4 c. chopped broccoli
3/4 c. shredded Cheddar cheese
3/4 c. chopped ham
Bread crumbs
Oil for deep frying

Cook and mash potatoes (this works best with microwaved baked potatoes because of lack of moisture). Add 1 egg and Parmesan cheese and mix thoroughly. In separate dish, mix remaining ingredients. Roll potato mixture into large golf ball size in hand and with finger make a forough in center of ball. Fill this forough with mixture and shape potato around it. Beat remaining egg, then roll stuffed potatoes in this, then in the bread crumbs. Deep fry the stuffed potatoes 5 minutes or until the surface is golden brown. Makes a great main dish or can be served as a lite lunch with a salad.

Since microwave ovens vary in power, you may need to adjust your cooking time.
