FRUIT CAKE COOKIES | |
4 eggs 1 c. bourbon 1 1/2 c. brown sugar 6 c. pecans, chopped 1 tsp. cinnamon 1 tsp. cloves 1 tsp. baking soda 1 tbsp. buttermilk or sour milk 4 c. cake flour 2 lbs. candied cherries 2 lbs. candied pineapple 1 lb. seedless raisins, light 1 lb. seedless raisins, dark 1 tsp. allspice 1 tsp. nutmeg 1 stick butter Cut up fruit and nuts and flour with 1/2 cup of the cake flour. Cream butter and sugar; add eggs, milk and whiskey. Sift and add dry ingredients. Fold over fruit and nuts. Drop by teaspoon on cookie sheet. Bake at 275 degrees (lower on electric oven) for about 12 minutes. |
