TEA CAKES (ICED SUGAR COOKIES) | |
1 c. butter 2 c. sugar 4 eggs 4 to 5 c. flour 4 tsp. baking powder 1 tsp. salt 1 tsp. vanilla Cream together butter and sugar; blend in eggs. Combine rest of ingredients with mixer in large bowl. Roll onto floured surface 1/8 inch thick. Cut with cookie cutter. Bake on ungreased sheet at 375 degrees for approximately 10 minutes. These are super simple. The thicker you roll them out, the chewier they are. The thinner ones are crispy. Also don't overbake. Take them out just as they begin to brown; they may not even look done, but overbaking makes them tough. More flour may be needed depending on humidity, etc. to make dough of rolling consistency. ICING: 1 box powdered sugar 1 stick butter Add buttermilk until desired consistency Food coloring, optional |
