GRAND MARINER CHOCOLATE CHIP
COOKIES
 
2 1/2 c. oatmeal
2 c. flour
3 tbsp. Dutch cocoa or Hershey's instant
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 c. butter
3/4 c. granulated sugar
3/4 c. brown sugar
2 eggs
2 tbsp. orange extract
3 tbsp. Grand Mariner or Triple Sec
12 oz. bag semi-sweet chocolate pieces
1 1/2 c. walnuts or pecans, chopped

In food processor or blender, process oats until flour consistency. Add flour, Dutch cocoa, salt, baking powder, baking soda and process in batches until well mixed. Place in large bowl. In food processor cream together butter and sugars. Add eggs, mix, add orange extract and Grand Mariner; mix. Add mixture to flour mixture and blend. Add chocolate pieces and chopped nuts. Use 2 tablespoons per cookie, roll into ball and flatten slightly. Place 2 inches apart on ungreased cookie sheet. Bake 350 degrees 14 minutes. Yields 3 to 4 dozen.
