PEANUT BUTTER OATMEAL COOKIES 
2 2/3 c. rolled oats
1 1/2 c. flour
2 tsp. orange peel
1 tsp. baking soda
1 tsp. baking powder
3/4 tsp. salt
10 tbsp. butter
1/2 c. peanut butter
2/3 c. firmly packed brown sugar
1 1/3 c. sugar
2 eggs
1 tsp. vanilla
1 1/3 c. salted peanuts, coarsely chopped
1 c. chocolate chips or peanut butter chips

Whisk flour, orange peel, baking soda, baking powder and salt together. Cream butter and peanut butter until light. Beat in brown sugar. Add white sugar. Beat until light and fluffy. Beat in eggs. Add vanilla. Fold in flour mixture. Gently fold in oats, peanuts and chocolate chips. Drop batter onto cookie sheets three inches apart. Bake 350 degrees, 10 minutes.
