CREAM OF BROCCOLI SOUP 
2 tsp. butter
1/2 c. diced onion
1 (10 oz.) pkg. frozen chopped broccoli, thawed
1/2 tsp. salt
1 bay leaf
1 tsp. flour
1 c. evaporated milk
1/2 c. chicken broth
Optional: stir 3/4 cup Cheddar cheese, shredded

Melt butter, saute onion until translucent. Add broccoli, salt and bay leaf and stir to combine. Sprinkle vegetables with flour and stir quickly. Cook, stirring constantly for 1 minute. Continue stirring and gradually add milk.

Add broth and bring to a boil. Reduce heat; simmer until thickened. Remove bay leaf. Transfer soup to blender and process at low speed until smooth.
