TURKEY SPINACH ROLLS 
2 pkg. frozen chopped spinach, thawed & drained
4 oz. shredded mozzarella cheese
1 tbsp. basil
1/2 tsp. garlic powder
1/2 tsp. salt
2 tbsp. melted butter
1/4 c. bread crumbs
6 to 8 turkey cutlets (I use Cuddy Farms)
2 tbsp. melted butter (for patties)
1/4 c. bread crumbs (for patties)

In medium bowl, combine spinach, cheese, basil, salt and garlic powder. Spoon on equal amount of spinach (1 to 2 tablespoons) across turkey cutlet, roll up and secure with toothpick. Place in 11 x 7 inch microwave dish. Melt butter for 45 seconds in microwave. Pour over cutlets and sprinkle bread crumbs over cutlets. Cover with wax paper and microwave on high for 7 to 8 minutes. Let stand 3 minutes.

With leftover spinach, add 1/2 a beaten egg and 1/4 cup or less of bread crumbs. Mix well and form into patties (approximately 2 patties). Melt 2 tablespoons butter and fry 4 to 5 minutes on each side.

Since microwave ovens vary in power, you may need to adjust your cooking time.
