CHICKEN & POTATO SALAD 
2 c. diced cooked chicken
2 c. cooked new potatoes, unpeeled
1/4 c. chopped scallions
1/2 c. chopped celery
2 tbsp. white wine vinegar
1/4 c. olive oil
1/2 tsp. Dijon mustard
2/3 c. mayonnaise
Salt & freshly ground pepper, to taste
2 tsp. minced fresh dill
2 tbsp. chopped parsley
4 slices crisp bacon, crumbled

Combine poultry, potatoes, scallions and celery in a bowl. Mix vinegar, oil, mustard and mayonnaise together until smooth. Fold into chicken mixture. Season with salt, pepper and dill. Sprinkle with parsley and bacon. Serve cold.
