KAREN'S BROWN RICE AND CHICKEN
SALAD
 
1/2 c. brown rice
1 c. water
1/4 tsp. salt
2 c. skinned, cooked, cubed chicken
1 stalk celery, chopped
1/4 c. chopped parsley
1/4 c. sliced green onions
1 tsp. dill weed
(Lite) mayonnaise

Cook the rice in the water and salt as directed on package. Drain. Combine the rice, chicken, celery, parsley, onions and dill weed. Add as much mayonnaise as desired. Toss. Slivered almonds may be added for an extra touch. Serves 4.
