JEN'S ITALIAN MEATLOAF 
This makes a big meatloaf so you can always freeze half of it if you don't plan on eating it for leftovers right away.

1 1/2 lb. ground beef
1 egg, beaten
1/2 tsp. salt
1 1/4 tsp. pepper
1 cup crackers, crushed (I use saltines)
2 (15 oz. ea.) cans tomato sauce (Hunts), divided
1 medium onion, chopped (optional)
2 tbsp. vinegar
2 tbsp. mustard
2 tbsp. brown sugar
1 1/2 cans water (use empty sauce can)

Combine meat, egg, salt, pepper, crushed crackers, 3/4 can tomato sauce. Mix lightly. Shape into loaf and place in a shallow baking pan.

Bake at 350°F for 10 minutes and remove. Pour remaining ingredients over meatloaf after mixing well. Bake 1 hour, basting occasionally.

Goes great with sweet peas and mashed potatoes.
