YELLOW SQUASH MUFFINS 
2 c. yellow squash, cooked and mashed, drain
2 eggs, beaten
1/2 scant cup of sugar (can use less)
3 c. plain flour
1 tbsp. plus 2 tsp. baking powder
1 tsp. salt
3/4 c. oil
Chopped nuts, optional

Add together beaten eggs, oil and squash. Sift dry ingredients into a large bowl, add other ingredients. Mix by hand. Spoon into muffin pans and bake at 400 degrees until lightly browned.

I just picked a bunch of yellow squash in my garden and was roaming the net looking for something different to do with them and spotted this recipe. I was expecting something like a traditional cake type muffin, but these are closer to biscuits. I have to admit, they are GREAT!! A little butter and a drop or 2 of honey and they make a great snack!
