OVEN DRIED TOMATO RELISH 
10 medium to large tomatoes
1/4 c. virgin olive oil
1/4 c. fresh cracked black pepper
2 tbsp. coarse salt
1 tbsp. minced garlic
1 small red onion, diced
1/4 c. fresh chopped basil
1/4 c. capers
1/4 c. virgin olive oil
1/4 c. balsamic vinegar
salt and pepper to taste

Core tomatoes and cut in half. Combine next four ingredients to make a pepper rub. Coat tomatoes with pepper rub and bake at 190°F on a rack. Mix remaining ingredients and combine with roughly chopped tomatoes to make relish.
