SCRUMPTIOUS CARROT CAKE | |
4 c. ground carrots 1 1/2 c. sugar 1 1/2 c. cooking oil 4 eggs 2 c. flour plus 3 tbsp. 3 tsp. cinnamon 2 tsp. nutmeg 2 tsp. baking soda 1 tsp. salt 1 c. nuts 1 c. raisins Mix oil, eggs and sugar, then add all sifted dry ingredients. Next, add well-drained carrots, nuts and raisins. Bake in large 10x14 inch pan or bundt or 2 loaf pans at 350 degrees. When cool, frost with cream cheese frosting. |
