HAM & POTATO CASSEROLE 
3 c. diced ham
1 onion, chopped fine
3 tbsp. chopped green pepper
1/2 stick butter
3 tbsp. flour
2 c. milk
1/2 tsp. salt
Pepper
4 c. sliced, cooked potatoes
3/4 c. shredded cheese

Cook onion and green pepper in butter, about 5 minutes. Stir in flour. Add milk, salt and pepper. Stir and cook until mixture is thick. Add ham and potatoes. Pour into 2 quart casserole. Sprinkle with cheese. Bake 25 minutes at 350 degrees.
