CLAM FRITTERS 
25-30 med. sized clams, drained
1 med. size onion
1/2 c. pancake mix
Salt & pepper to taste

Chop or grind clams and onion. Mix all ingredients. In skillet or on griddle heat enough shortening to prevent sticking; add clam mixture by tablespoonfuls. Cook the same as when making pancakes.
