TWICE-BAKED POTATOES | |
2 med. baking potatoes 1/2 c. cream-style cottage cheese 1 tbsp. mayonnaise 1/4 tbsp. salt, or to taste 1 tbsp. shredded Cheddar cheese Vegetable oil 2 tbsp. butter, softened 1 tbsp. chopped chives 1/8 tbsp. pepper, or to taste Paprika Scrub potatoes thoroughly, and rub skins with oil. Bake at 400 degrees for 1 hour. Allow potatoes to cool to touch. Cut potatoes in half lengthwise. Carefully scoop out pulp, leaving shells in tact. Mash pulp. Combine potato pulp and next six ingredients; mix well. Stuff shells with potato mixture; sprinkle with cheese and paprika. Place in a shallow baking dish; bake at 375 degrees for 15 to 20 minutes or until thoroughly heated. Yields: 2 to 4 servings. |
