ROSIE'S SALSA 
50 lb. tomatoes
2-4 lb. jalapeno peppers
3-5 lb. onion
2 lb. garlic
1 c. vinegar
1/2 c. oregano
1/2 c. cumin
3 bunches Cilantro
1/8 c. sugar
Salt to taste

Slip tomato skins. Cook tomatoes down to thick consistency. Remove excess liquid. Add all other ingredients finely chopped. Mix well. Bring to a boil, fill jars, water bath 10 minutes.
