SAUSAGE AND PEPPERS ITALIANO 
1 lb. Italian sausage, cut into chunks
2 tbsp. water
1 lg. bell pepper, cut into strips
1 med. onion, sliced and separated into rings
2 cloves minced garlic, can use more
1 can Campbells zesty tomato soup/sauce
1 c. water
1 tsp. vinegar
1 1/2 to 2 c. cooked rice

In covered skillet over medium heat, cook sausage in water for 5 minutes. Uncover; cook until sausage is brown on all sides. Add pepper, onion, and garlic to sausage and cook till peppers are tender crisp, stirring frequently. Spoon off fat. Stir in soup, water, and vinegar; reduce heat to low. Cover and simmer 10 minutes. Meanwhile, cook rice according to directions. Serve sausage and peppers over hot cooked rice. Very good.
